How to make beautiful scones!

20130202-171542.jpg

After my brother and I had tea at the Ritz, he’s been begging me to make scones! So I found an amazingly quick and delicious recipe that’ll have your family mmming and aaaahhing over!!!

Recipe makes: 10 scones (enough for 2 scone lovers like me and my brother)
Preparation time: 10 mins
Baking time: 10-12 mins

20130202-162451.jpg

Ingredients:
• 225g or 1 and 2/3 cups of self raising flour and a little extra for dusting
• 75g or 5 tablespoons of room temp butter (just bung it in the microwave for 10-15 seconds)
• A pinch of salt
• 40g or just under 3 tablespoons of caster sugar (I used brown because I’m healthy.. YEAH RIGHT.. It’s all I had)
• 1 large egg
• 2 tablespoons of buttermilk and a little extra for brushing over scones at the end
• Cranberries, raisins or any dry fruit you like
• The normal condiments to scones such as clotted cream and jam etc

Always start by preparing your ingredients and preheating your oven! The hotter the oven, the quicker and evenly your treats bake! We need the oven at Gas mark 7 or 425c

FIRE!!!!

And I like to prepare my baking trays as well so just line with baking paper and pop to the side ready for later

20130202-162504.jpg

Grab your mixing bowl and sift in your flour

20130202-163142.jpg

Then pop in your room temp butter

20130202-163150.jpg

And mix them together to make a breadcrumb consistency (use your fingertips to do this.. Like a fairy)

20130202-163200.jpg

It should look like this

20130202-163210.jpg

Add in your pinch of salt

20130202-163219.jpg

Then your sugar

20130202-163239.jpg

And mix with a small wooden spoon

20130202-163253.jpg

In a separate bowl (I just used the bowl I warmed my butter in to save washing up), get your buttermilk

20130202-163309.jpg

And get your egg

20130202-164101.jpg

Crack that baby in

20130202-164111.jpg

Then whisk together so it looks like this

20130202-164133.jpg

Then just pop the wet mixture into the dry

20130202-164142.jpg

And mix together

20130202-164153.jpg

And it will all come together and end up looking like this

20130202-164210.jpg

At this point, when it’s this consistency, get your hands involved

20130202-164512.jpg

I find it best to move one edge of the dough

20130202-164521.jpg

To the opposite side and repeat this quickly

20130202-164529.jpg

The dough will form a ball

20130202-164538.jpg

And smack that ball onto a floured surface

20130202-164555.jpg

Flatten the ball with your hand

20130202-164614.jpg

And you can use a rolling pin to spread out

20130202-164631.jpg

The dough should be no smaller than inch thick

20130202-165037.jpg

At this point, grab your cookie cutter or whatever you have that is between 2-3 inches wide

20130202-165109.jpg

In a swift motion, press down and cut

20130202-165120.jpg

You’ll have a lovely round shape

20130202-165129.jpg

And just pop this out

20130202-165139.jpg

Of course.. I forgot to add the dried fruit so I chose cranberries and just mixed them into the dough and repeated the cutting process

20130202-165605.jpg

20130202-165613.jpg

20130202-165624.jpg

20130202-165634.jpg

And it looked like this

20130202-165644.jpg

So then just pop them onto your baking tray, gathering the dough each time and cutting again

20130202-165918.jpg

20130202-165928.jpg

20130202-165944.jpg

20130202-165936.jpg

Cut off any excess baker paper from the edges

20130202-170212.jpg

With a tissue or a brush if you have one, brush a little buttermilk on the top of the scones

20130202-170220.jpg

Then dust with flour

20130202-170237.jpg

And you can pop them in the oven!

20130202-170251.jpg

Don’t forget to make a note of the time!

20130202-170535.jpg

And then you need to take care of the mess you made.. ARGH!

20130202-170527.jpg

Leave them in the oven for 10-12 minutes until they’re golden brown..

20130202-170547.jpg

LIKE THIS!!

20130202-170554.jpg

Then just pop them on a cooling rack

20130202-170603.jpg

And they’ll look lovely like this!

20130202-170609.jpg

Now.. DEVOUR!
Try with Nutella and enjoy with tea!

The Ritz!

20121205-162233.jpg

Today was an extremely exciting day for me! As a treat, my brother surprised me with an invite to the Ritz for afternoon tea! In his own words; “you like tea, so I thought why not?”. Couldn’t really argue with that so I went for it!

20121205-162218.jpg

This kind of stuff is right up my street and I have never really been anywhere like this with my brother before so was really happy to share the experience with him!

So we began the morning at an hour I haven’t woken up in a month since I’ve been off work! I was awoken with a lovely text message urging me to wake up immediately and rolled out of bed! It took me ages to decide what to wear because I thought it would be a cold, wet and dreary day but as soon as we got out it was AMAZING weather!

My brother decided to not wear a whole suit because that would be a little too smart for the little casual yob! Instead he opted for a mismatched suit and trouser combo which I think looked highly adequate for the event :)

20121205-162446.jpg

Jacket is from Zara
Suit jacket is VERY old and he doesn’t remember from where
The shirt is from Prada
The shoes are from Burton
The tie is from Zara
The scarf is from River Island
The underwear is from.. Got you!

I opted to go for simplicity so the only things worth mentioning are my ASOS leather lapel jacket and River Island boots (£7.50)!!!

After a hectic morning we parked the car (it took us 15 minutes to find a spot) and we then hopped on the train! After arriving, the weather was fantastic and the sun was shining brighter than ever!

Allow me to tell you the story in pictures..
