How to: make chocolate chip and peanut butter cookies!

The other day I made cookies for 20-30 people and needed to think up a recipe which was quick and yummy because I didn’t want to spend hours making them! I made a batch of white chocolate chip, milk chocolate chip and peanut butter! And my brother gave me the idea to mix the peanut butter and milk choc chip together for a unique flavour! This is perfect for people who want to make a quick treat whilst the kids are on a break from school!

Makes 12-14 cookies
1/2 cup room temperature butter
3/4 cup sugar
1/2 teaspoon vanilla extract
1 egg
1 & 1/4 cup plain flour
1/2 teaspoon of baking soda
2 tablespoons of peanut butter
100g chocolate chunks

Always start by preparing the oven and lining the baking tray with paper. Gas mark 5 for today’s treats!

You then want to get your butter (if its cold out the fridge, put it in the microwave for 10-15 seconds)

Add 3/4 cup of sugar

And very lightly cream together- you don’t want it to be smooth but just ensure all the mixture is combined. Over mixing will leave the mixture too runny and we’re looking for more of a dough as a harder dough cooks better biscuits.

Pop in your egg

And vanilla extract. I don’t like using vanilla essence as it’s often artificially flavoured and doesn’t taste as good

Add in 2 tablespoons of peanut butter but of course you can add as much as you like depending on what your taste preference is. I’m using a chunky peanut butter with nuts for an extra crunch

Bit by bit, add in your flour and mix the mixture in

Add in your chocolate chips/ chunks/ pieces.. Whatever you like!

Add in your bicarbonate of soda and mix this in well and evenly

Your mixture will resemble this

And that’s when you can scoop your mixture, a tablespoon at a time, into a heap. I managed to make 12

You’ll need to leave them in the oven for around 20 minutes but don’t be afraid to take then out and lightly feel the centre of them.. If its too soft, give them another 5 minutes. And when you’ll take them out, they’ll look like this.

Ah the good old days! Was my most favourite time! It was the transformation of my life.. Obviously! There were the funniest days in my school days. I was always in the ‘popular‘ crowd! Probably because I always tried to my hardest to be ‘normal‘. I think I managed well at school! I could always have fun but finish my work too! I was the class clown who would make the cheeky remark that would have the students in tears of laughter and the teacher in sniggers! E.g. Whilst reading a book, my eyes somehow read two lines at once:

So naturally, I came up with Penis! HAHAHA! I don’t know why! But it was bloody funny! I think secondary school was my in element! I was the girl who was transformed to a girl in braces, glasses and a pony tail. But one day, I came to school and even my best friend couldn’t recognise me! My long plaited hair had been let loose into gorgeous curls, my boxed eyes into an array of long curly eye lashes with my hazel eyes unleashed and my teeth were now straight and I had to smile to kill! Good job I went to an all girls school! But I think growing up, going to a sixth form which was mixed sex, is what really made me who I am. That ‘sexiness‘ wasn’t how I wanted to be. I had found the man I wanted to spend the rest of my life with, so why should I make an effort to look good for men who I don’t know? I know I’m happy in my own skin and I don’t feel THAT insecure where I have to dress a certain way to get attention! I had too TOO TOOOOO much male attention! Often it got me into a lot of trouble.. Guys interrupting lessons to get my number, not concentrating on their work cause they’re gawping like dogs! I hate men!
But the school work was something which I loved! I love learning new things! To tell the truth.. I always forgot what I learnt in lesson! I have a really bad memory! I would always have to come home and re-read my books to revise the weeks work! But I would never forget It whenever I taught myself! I loved school! It was too fun! There are so many memorable moments! I’ll be sure to write about them as and when I remember them!

Most memorable moment…

This has to be the first day of school for me! Not only was I unaware what school was thanks to my Asian parents not explaining it (they were glad to have time (why don’t Asian parents ever have no time???)).. I was also unaware of the tragedies that lay ahead! First of all, my parents had given me a watch for learning all my Salaah’s (Prayers), so that I could pray them on time. To me, it was the most beautiful thing in the world! The watch hands were tennis rackets and the background was of some butt naked woman (How contradictory) beating the crap out of a tennis ball! So.. on my first day, the class whore conned me into doing a swap for it, with some china doll that her mother had got from some jumble sale. I was so innocent and was so brutally broken in to! The first day of school.. The first day of the rest of my life! At least it eased me into the rest of life. It taught me a valuable lesson.. THERE’S ALWAYS A SCHEMING HCTIB OUT THERE TO GET YA!
