How to make a red velvet cake.. Differently!

For my second post I thought it’d be nice to give you a good option as its half term (spring break) for the kids and it’s such a lovely day in London, this one is perfect for picnics!

Ingredients:
125g butter, softened
300g caster sugar
63eggs
1 tablespoons red food colouring
1 & 1/2 tablespoons best quality cocoa powder
180g plain flour
250ml buttermilk/milk
1/2 teaspoon vanilla extract
Pinch of salt
1/2 teaspoon bicarbonate of soda
2 bars of chocolate

Always start your baking by preparing the things you will need at the end of your mixing so have your cake tin lined with baking paper (I put something inside the tin to keep the paper weighed down).

20130402-111130.jpg

Preheat the oven to Gas Mark 3/ 170 C

20130402-111137.jpg

Whenever there is butter and sugar in a recipe, be sure to use room temperature butter because you’ll have to cream them together and having a softer butter makes this easier.

20130402-111746.jpg

You then want to add your eggs in one at a time and mix well after each one

20130402-111922.jpg

And your mixture will begin to look like this

20130402-111931.jpg

Add your cocoa powder and food colouring and mix until it begins to look a vivid red colour! I used a food colouring powder as that’s all I had

20130402-112026.jpg

Add your salt, vanilla extract and bicarbonate of soda to the mixture

20130402-112301.jpg

Then add a little of your milk/buttermilk and flour alternately, mixing well between each addition

20130402-112352.jpg

Pop the mixture into your cake tin and put in the preheated oven

20130402-112453.jpg

I left my cake in the oven for over an hour (it is quite a low heat, though)

20130402-112639.jpg

When you take the cake out, it’ll be a gorgeous bake with a few cracks on the top if its anything like mine. Stick a clean knife in and out and if the knife comes out clean, your cake it ready!

20130402-112716.jpg

Because I’m a chocoholic, I melted 2 bars of chocolate (I used Galaxy cookie crumble and plain Dairy Milk). I then carved a hole in the middle of the cake and poured the melted chocolate within the whole and spread the other bar of chocolate all over the top. To help the chocolate set, I put the cake in the fridge using a bowl to prop it up so that the chocolate in the middle didn’t pour out.

20130402-113110.jpg

And you can then enjoy…

A surprise weekend!

What a weekend I’ve had! Plenty of surprises, guests and events have been going on! No need to worry, guys.. LET ME FILL YOU IN!

The weekend begun on Friday after work (however, the planning for these events have been going on for around a month for me)! So after work, off I went to collect my cousin Miss A. the Olympian from her house! It took quite some time because of traffic etc and we arrived home at around midnight!

Now.. The Bubble household is fully aware, on the days that Miss A. comes round, it’s going to be a late night so of course we went to bed around 5am!!! I woke up the next morning at around 10am and got dressed! I left the house as soon as Miss A. got in the shower as, I knew she would ask plenty of questions!

I grabbed my dad and we ran out to our local grocery store where I had already got a list of all the shopping I needed! I knew exactly what I was going to cook and the reason I left the house so early, was because I needed to let the meat marinate whist I was out with the girls!
20121001-172605.jpg

After I arrived home, the questions began from my cousin but I carried on as normal and began to put all my shopping away whilst my lovely dad made us all breakfast! After we had finished. It was almost time to head on out and almost time for the surprises to begin!
20121001-172625.jpg

On the way to the shopping mall, I had put little goody bags under mum and Miss A’s. seat! They were full of all things girly like jewellery and shoes and bags that I knew they would all love! Luckily they were so excited and I could tell they were very happy with their presents!
20121001-172637.jpg

I knew work would be packed and the first surprise was Miss A. getting her iPhone 5! So I got all all the staff at work to know I was coming and we had planned a big prank on her.. But, of course.. My luck meant that we got stuff in traffic and the prank would have taken some time and so I let them know that we’d have to leave it! It’s a good prank though, so I shall use it to play on someone else for another time!

We got to work and she got her phone! A very good deal on it too and off we went to surprise number 2.. A MANI/ PEDI! Now my cousin wanted a back massage instead of a pedicure so I complied and made sure she got what she wanted! I had told the staff in the salon to expect 3 people and I told them to book us into a basic manicure and pedicure but this could be changed later! The reason being because I’m not sure what my mum would want and what my cousin would have liked! It was so nice and my mum got her first ever spa-like treatment!

20121001-174544.jpg

After this, we had a little stroll around the shopping centre and I had planned for a fellow florist to hand over some BEAUTIFUL flowers to my mum and cousin! They were gorgeous and even better than I had planned them to be! Mum as Miss A. Were very surprised and I think they liked them! It was quite funny because Mum saw the stall for the flowers and said we should get some flowers for decoration but little did she know, I had already or her some!
20121001-172659.jpg
20121001-172707.jpg

We then went into a jewellery store and chose some really nice pieces of jewellery!

After this, we were exhausted, so headed on home where everyone was STARVING! We hadn’t eaten since the morning and so I started to make dinner! I had planned a 3 course meal! (Want to see the menu..? I can do a blog post on it) The dessert… decided everyone could make their own ice cream cones and had to decorate them accordingly! The best people would win prizes!
20121001-172715.jpg

So of course, after the ice cream challenge, I thought everybody had very creative designs and they all won!
• My brother got a Manchester United football shirt with his name on the back
• Mum got an electric toothbrush thing she had wanted for a while
• Dad got a jacket cause he is OBSESSED with them!
• And wonderful Miss A.. A trip to Paris!!!

20121001-172820.jpg

They were all so happy with their gifts and I could tell that they were shocked about my planning! So to all my French readers: BONJOUR!!!! I’ll see ya soon!

I had no recollection of what happened after this point because I fell asleep straight after and I was EXHAUSTED!!
20121001-172727.jpg

The next day arrived and Miss A. Got ready to go home however, we had a busy evening planned and so after she left, I got in the shower and began getting ready for a fun-filled evening In central London!

20121001-172805.jpg

We had planned a dinner at a South African style restaurant in London as my cousin had recently got a new job! It was brilliant fun and the food was fantastic! They had amazing South African style drinks which tasted so nice!

20121001-172813.jpg

We had then planned a comedy show for my favourite comedian Michael McIntyre at the O2 arena (millennium dome) and we had such a laugh! The atmosphere, the place and the journey were all so FANTASTIC!

20121001-172835.jpg

20121001-172933.jpg

20121001-172948.jpg

This was then topped off with a coffee stop which really refreshed us and off we went home! By this time it was quite late and so we all parted ways and off we went home!
20121001-172651.jpg

Just wanted to share the weekend with you guys as I had so much fun and I know I’ve been MIA lately, but I’m back now with plenty of posts to keep you guys busy!

EID!!!

Let me give you a run downnnnnn!!
I blogged all day throughout Eid of te main things I wore and done, but let’s share in a little more detail, shall we :)

So my make up and clothes I already showed many of you guys! Unfortunately, in all the pictures that were taken, my hair was out so I don’t have a picture of me wearing my outfits! I wore 2! Simply because I had guests over at my house and then went out later!

My first outfit! A light beige colour with real embroidery! I live this lightweight suit and it manages to look demure but still young

20120820-183412.jpg

The second outfit was for when I went to my uncles house! It had a lot more beading and detail and I loved the nude colour! It also kept me very cool! The earrings are from Debenhams and the shoes from New Look for £19.99

There’s a lot of food here, so take a look and if your mouth waters, it smells and tastes as good as it looks! WHOAAAA MOMMAAAA!

EID MUBARAK!!! Clothes + OOTD

So obviously, I’m Pakistani!! Well it’s not obvious but now, you know I am! I’m a big fan of the new style of clothes that have come in which are long and baggy because they remind I my abaya! An abaya is my shell! So I love that!

This is what I’m wearing today! With a complete OOTD for you too!

Earrings: Debenhams
Suit: Pakistan
Shoes: Boutique in Chiswick, London

Some of you may notice, I don’t go ‘all out’ on Eid! Simply because we’re SOOOO busy and always moving around! So I’d rather be comfortable! Also, Eid is always around my uncles house so we’re at home where we wear no shoes and sit on comfortable sofas! No need for faff!

EID MUBARAK!!!! Make up

EID MUBARAKKKKKKKKK!!! This is my first Eid with my fellow WordPress-ers! I’m so excited and happy to spend it with you guys! I’ll try to blog a couple of times today! I’ll include lots of pictures and ensure I give you the low down about our festivities!

20120819-124438.jpg
I’ll start with my make up!!!

  • Rimmel hide the blemish concealer.. It’ll lasts all day and makes your skin look flawless!
  • Bit of Nars Sheer glow because it looks fantastic! Makes your skin look healthy and yummy.. Only a bit of foundation though cause the temperature is 31 degrees Celsius!
  • Sleek au Naturel palette mixing the 4 colours at the top middle (highlighted) which gives me a nice even base!
  • Nars laguna! I’m using this perfect mid brown colour to use in the crease to define my eyes and I’ll use it in the hollows of my cheeks too
  • Maybelline colossal volume express mascara for volume and for a big boost to my natural lashes
  • Maybelline eye studio gel eyeliner for a lovely cat eye to enhance me eyes
  • Fasionista gel eye liner! No colour but this looks great on top of the black as it has green glitter in it (not highly pigmented, though, hence the black first)

  • Beauty UK glitter liquid eye liner in gold which looks so nice in the inner corners of your eyes and lash line!
  • Jemma Kidd cream blush in guava! Perfect coral pink
  • Elizabeth Arden Crystal Baby which is a gorgeous sheer and shiny nude pink

    Say CHEESE- cake

So I’ve attempted to make cheesecake quite a few times and have failed in trying to do so a few times too. Until TODAY! Everything fell into place!! I found a fantastically easy recipe and having made it wrong a few times, i learned the error of my ways today.. UNDER- WHISKING!

So the general mix of a cheesecake is cream cheese and a man with a strong right arm.. Unfortunately he lives 112 miles away so I’ll have to make do with an electric whisk!

    So here’s the ingredients:

    • 8 digestive biscuits
    • 50.0g butter , melted
    • 600g cream cheese
    • 2 tbsp plain flour
    • 175g caster sugar
    • vanilla extract
    • 2 eggs , plus 1 yolk
    • 142ml pot soured cream
    • 300g raspberries
    • icing sugar

Please do not limit yourself to raspberries and the only reason I used them was because my mum bought some from the market recently and they tastes DELICIOUS! Remember not to choose a citrus fruit such as mango, peach or orange cause we all know what happens to your bowel motion when you mix dairy and citrus :) However, if you want to use lemon you can do so which I’ve never understood cause thats a citrus, right?

    Any who heres the recipe:

    1. Heat the oven to 180C/fan 160C/gas 4. Crush 8 digestive biscuits in a food processor (or put in a plastic bag and bash with a rolling pin). Mix with 50g melted butter. Press into a 20cm springform tin and bake for 5 minutes, then cool.
    2. Beat 600g cream cheese with 2 tbsp flour, 175g caster sugara few drops of vanilla extract2 eggs, 1 yolk and a 142ml pot of soured cream until light and fluffy. Stir in 150g raspberries and pour into the tin. Bake for 40 minutes and then check, it should be set but slightly wobbly in the centre. Leave in the tin to cool.
    3. Using the remaining 150g raspberries, keep a few for the top and put the rest in a pan with 1 tbsp icing sugar. Heat until juicy and then squash with a fork. Push through a sieve. Serve the cheescake with the raspberry sauce and raspberries.

HOW QUICK WAS THAT? This recipe has over 600 recommendations!

    Here’s my tips:

    • Instead of using a square tin to bake it in, use a round tin and if you don’t have one, go get one cause i find that baking cold-based products always present themselves better in it. If you do use a square tin, ensure it isn’t a bread loaf or lasagne tin as the cheesecake just won’t cook.
    • For the whisking, it takes around half an hour in total. This may be because i used the lowest setting on my whisk to ensure the cake was extra light and fluffy because once this baby sets, It’ll be extremely heavy if not beaten well. This is the part where you zen in the kitchen and let the hum of the whisk, scent of the mixture and smooth motion, calm your mind.
    • Instead of using an icing sugar mixture, why not melt some white/ milk chocolate and add a little milk to make the chocolate a little more runny and less rich, then put the raspberries in the chocolate and pour over the cake. As a form of decoration, you could even use a jug, gravy boat etc and poor the chocolate in there and garnish the top with some raspberries and a sprig of mint so those who wish to indulge, can.
    • Remember, cheesecake likes being made love to softly and gently, unlike cake which kind of likes it rough. The smoother you are, the easier the cake will set through to the middle, unlike many of my previous attempts :(

Have fun ladies and gentlemen! To all my fellow Muslims.. If Iftaar is around 9, start making this around 6 and leave in the fridge until after you open your fast and it should be PERFECT! What a perfect treat to open your fast with! WOOOOOOOOHOOOOOOOOOO!
